Andrew & Richard McKee

Lough Eske Castle recently welcomed talented new chefs, Armagh born brothers Richard McKee and his brother Andrew McKee, to their kitchens. Richard, who assumes the role of Head Chef is highly skilled, having spent years training as a chef in college in Newry and then took up roles in Castle Leslie, Lough Erne Resort and Redcastle Hotel. Richard credits his travels around Asia and Australia as inspiration for his dishes. His food ethos is “minimal wastage, clever utilisation of seasonal produce, as well as health being considered when creating a dish.” He has been decorated with several Rosettes over the years, and his specialty is pastry, crediting his mother for introducing him to the art of wedding cake making when he was a child.
Andrew McKee, who is a year younger than his brother Richard, will assume the role of Sous Chef at Lough Eske Castle. Andrew has worked in well-known institutions such as the Nuremore Hotel, Lough Erne Resort and the Redcastle Hotel. Andrew came second in the British Young Chef of the Year in 2014 and made it to the semi-finals of the National Chef of the Year 2016.
Lough Eske Castle is looking forward to seeing their creativity in the kitchen with new menus to be launched by summer.
